A Recipe: Black Bean and Corn Salsa
This is one of my favorite recipes to make when the weather is nice and we begin grilling outdoors. It is fresh and can be eaten with tortilla chips or served aside grilled chicken or pork as a salsa. I also like it just on its own and it makes a large amount but never lasts long.
Black Bean and Corn Salsa
2 cans of black beans - drained and rinsed
1 bag of frozen corn - defrosted (you can use canned corn but frozen tastes fresher and better yet, you can grill corn on the grill and cut it off)
1 small onion - diced finely
1 -2 jalapeno peppers - diced finely
2 tomatoes - diced
3 limes - juiced
2 avacados - diced
3 cloves of garlic - diced
1 bunch of cilantro - chopped
salt and pepper to taste
Cut all ingedients and then mix together in a bowl. Refrigerate for 1 hour prior to serving so flavors intensify. Enjoy!
